NYC chefs bring giant food hall to Eero Saarinen’s Bell Labs building in suburban NJ

Symbolic of the future-happy post-war era, Bell Labs, the research and development center for telecom giant AT&T, was one of Finnish architect and industrial designer Eero Saarinen’s architectural masterpieces, though his iconic TWA Flight Center may be better known. The two-million-square-foot modernist cube, built in 1962–the architect passed away in 1961 before it was completed—made a statement in the quiet suburban scenery. Within, scientists made famous discoveries and won Nobel Prizes. As the centuries changed, 2007 saw the end of era when Bell Labs shuttered. After American ambitions shifted from science to snacking, a seasoned culinary squad was tapped by RBC Hospitality Group, Eater reports, to bring the winning formula of sushi, pizza, sandwiches, pastries and grain bowls to the historic building in the 'burbs.

102-year-old Orwasher’s Bakery is preserving NYC nostalgia while adapting to the times

There's a good chance that if you've walked into one of Orwasher's Bakery's Manhattan storefronts over the past decade you've assumed the 102-year-old business is still family owned. But the original Orwasher family sold it in 2007 to Keith Cohen. The likely confusion comes from Cohen's dedication to maintaining the mom-and-pop feel of his Upper East and West Side locations, along with the vintage recipes for New York staples such as rye bread, challah, and sourdough. But he's also used his business smarts to make some well-received updates, including a major expansion of the wholesale business, a new line of wine breads in collaboration with Long Island-based vineyard Channing Daughters, a formula for the perfect baguette (he even traveled to Paris to learn the art!), and, perhaps most impressively, the addition of the elusive New York bagel. 6sqft recently visited Cohen at the two-year-old Upper West Side location to learn a bit more about his journey as master baker and proprietor of one of NYC's most beloved old-school businesses and get a behind-the-scenes look at where the magic happens.

Huge American Dream mall near MetLife stadium will put NYC’s food halls to shame

Is NYC's biggest food hall coming to New Jersey?! According to Eater, that may be the case. They report that the long-stalled (16 years, to be exact) American Dream mall planned for the site next to MetLife Stadium in East Rutherford will have 50 grab-and-go options, 20 full-service restaurants, a Vice-branded food hall, and the world's first Kosher food hall. This is in addition to the $3 billion, 4.5 million-square-foot shopping mall's insane amenities like the largest indoor ski slope in the western hemisphere, an NHL-sized ice rink, a 4-D movie theater, a LEGOLAND, and an eight-acre Nickelodeon water park and theme park.

Where I Work: The team behind Black Seed Bagels shows off their new Nomad shop

In this installment, we’re going inside Black Seed Bagels' new Nomad location. Want to see your business featured here? Get in touch! "We founded Black Seed with the goal of bringing extremely well-made bagels, bagel sandwiches, and coffee to everyone," said co-owner Noah Bernamoff. After he and Matt Kliegman met through a mutual friend while running separate restaurants (Matt, The Smile and the Jane Hotel ballroom and Noah, Mile End Delicatessen), they decided to open their first location of Black Seed Bagels in Nolita in 2014. The Montreal-meets-New York-style bagels became an instant foodie hit, and the partners now have locations in the East Village, Battery Park City, and, as of this week, Nomad. 6sqft paid Noah a visit at their latest location in the trendy Ace Hotel and chatted with him about Black Seed's journey. We also met with head baker Dianna Daoheung, who developed the shop's unique hand-rolled, wood-fired bagels (which garnered her a James Beard nomination) and expanded the menu to include sandwich collaborations with fellow NYC restaurants and chefs.

Battery Maritime Building’s hotel-restaurant conversion is back on track

The plan to convert the landmarked Battery Maritime Building into a hotel and Cipriani rooftop restaurant is back on schedule after an injection of capital into the project, Crain's reported on Thursday. Developer Midtown Equities will take a 30 percent stake, allowing construction to resume this fall or winter. In 2009, the city first approved a plan to redevelop the building, which sits at 10 South Street in the Financial District, but was delayed after a series of legal and financial setbacks.

New Yorkers are bypassing food trucks for McDonalds as fast food finds new footing

Even as New York City continues to experience record financial growth, a small explosion of fast food chains within city limits still comes as somewhat of a surprise. A recent Crain's article confirms that, even more surprisingly, McDonalds, perhaps the fast-foodiest of all, is not only expanding but polishing up its image to appeal to a more upscale market–and it's working. You might just chalk it up to a sweeping takeover by big chain stores, but isn't that about gentrification? Fast food has traditionally had a big presence in the city's lower-income neighborhoods–known as "food swamps"–and in tourist areas. But the nation's largest Chick-fil-A just opened in...the Financial District. Reasons for the latest fast food boom are many, it turns out, and extend beyond mere mallification.

Where to experience Bangladeshi culture in NYC, from the East Village to Ozone Park

It's hard to miss the two floors of flashing, chili pepper light-adorned Indian restaurants on First Avenue and Sixth Street in the East Village. The origin of these two stacked eateries, though, is much more frequently overlooked, as is the fact that the neighborhood's adjacent "Little India" is really more "Little Bengal." New York's main Bangladeshi community is often cited as being in Jackson Heights, which boasts a large South Asian population and a great representation of its diverse culture, including the beloved Patel Brothers grocery store. Less well known is that East New York also has a large Bangladeshi community, and in the 1990s, the East Village's "Curry Row" worked to identify itself as Indian, a culture more Americans at the time were familiar with. ‘Bites of the Big Apple’ maps around-the-clock eating habits of New Yorkers

Not only are New Yorkers eating at all hours of the day, they're also posting photos of the grub on Instagram. An animated map from Crimson Hexagon dubbed "Bites of the Big Apple" displays all of the food-related posts on Instagram published over a 24-hour period across the five boroughs. Not surprisingly, the number of photos of fried chicken, burgers and pizza increased after midnight, with snapshots of salads most prevalent around lunch time. And proving NYC is the city that never sleeps, photos of coffee were popular at every hour.

Governor Cuomo announces plans for NYC’s next ‘food hall’ at LaGuardia Airport

Shake Shack, Irving Farm coffee, La Chula taqueria--these sound like your typical food hall staples, but this time they're not in a Brooklyn warehouse or a trendy new building, but in LaGuardia Airport. Governor Cuomo announced today the lineup of in-state food purveyors for Terminal B, which will open in phases starting later this year as part of his massive $8 billion overhaul of LaGuardia. When complete, the entire new airport will have a total of 50 new restaurants, shops, and services, many of which will be local small businesses.

Astoria is getting a new food hall with outer-borough vendors

A new food hall is coming to the Astoria-Long Island City border in Queens, the Commercial Observer reported on Tuesday. Developer Vass Stevens Group is in the process of converting a former print shop, dollar store and restaurant supply store at 34-39 31st Street into a retail space with eight 2,000-square-foot storefronts. The interiors of the single-story building have been demolished and renovations, which will add new glass storefronts and doors, are set to begin soon.

"It was my first ‘oh, my God’ sake which was made in the U.S.A." said Japanese-born sake sommelier Chizuko Niikawa-Helton when he tasted the product of Brooklyn Kura, NYC's first sake brewery and one of only 15 in the nation. And this is exactly what co-founders Brian Polen and Brandon Doughan strive for. They're committed to respecting the thousands-year-old Japanese sake brewing traditions, but they also hope to inspire a new interest in this ancient beverage by using unique American ingredients and engaging New Yorkers in the process at their Sunset Park brewery and tap room. After meeting at a mutual friend's wedding in Japan and developing a passion for sake, Brian and Brandon teamed up and got to work on their 2,500-square-foot space in Industry City, which combines the functionality of traditional Japanese breweries with a contemporary Brooklyn design aesthetic. 6sqft recently paid them a visit and had a drink in the tap room (yes, we agree with Niikawa-Helton that the sakes are "so soft, so gentle"), got a look at the sake making process, and chatted with Brian and Brandon about their journey, life at Industry City, and how they're turning New Yorkers into sake lovers.

Roast, record, repeat: How Toby’s Estate brews the perfect cup of coffee at its Brooklyn cafe and roastery

In this installment, we’re touring the Williamsburg cafe and roastery of Toby's Estate Coffee. Want to see your business featured here? Get in touch! When you walk into Toby’s Estate Coffee, the smell of freshly brewed coffee hits you immediately. And thanks to the towering roasting machine in the back of the Williamsburg coffee shop (which roasts about 50 lbs of coffee at a time), the sweet-bitter aroma really lingers. While the location on North 6th Street between Berry Street and Bedford Avenue was the first Toby’s in New York City, the coffee connoisseurs have since sprouted to other boroughs, with three cafes in Manhattan and most recently one in Long Island City. Toby’s, which originated in Australia, has served up specialty small-batch coffee in NYC since 2012, bringing in some eclectic flavors to their roster of roasts. Currently, the shop is offering a Citron Espresso Tonic, with tonic water, ice, handmade citron simple syrup and candied oranges. (We tried it. It was delicious.) On an unseasonably warm day this spring, Toby's gave 6sqft a tour of its Brooklyn shop, which boasts enough square footage to fit its roastery and cafe, as well as plenty of seating. INTERVIEW: Architect Glen Coben dishes on his passion for design and restaurants

New York City architect Glen Coben's An Architect’s Cookbook: A Culinary Journey Through Design is part journal, part cookbook. The book shares Coben’s experience over the last 18+ years working with some of the world’s greatest chefs to create magical culinary experiences: Empellon/Alex Stupak, Del Posto/Mario Batali, Gabriel Kreuther, Carbone, The Marrow and Romera. Each chapter includes: the narrative between Glen and Chef – their story together throughout the process, sketches and renderings, followed by the final photos of the restaurant and recipes contributed by each chef. Coben loves what he does and it shows. To him, working with chefs to design their dreams means “there is another creative partner at the table.” 6sqft recently spoke with Coben and learned how it all started, about his restaurant inspirations and what the architectural equivalent of adding that special spice to meatballs is to make us all sigh in delight, ahhhhh.

Get a taste of Hell’s Kitchen with a food festival at the Intrepid this summer

However, none of these eating events take place next to an aircraft carrier on the Hudson River. Until now. The Intrepid Sea, Air & Space Museum announced this week that it will host a food festival at Pier 86, featuring more than 20 local vendors from the Hell's Kitchen neighborhood. The waterfront food fest, WestsideEATS, runs from 10 am to 6 pm on June 9 and June 10 (h/t TimeOut).

Adriana Urbina brings Venezuelan flavors to Nolita’s De Maria while empowering female chefs

Earlier this month, Nolita restaurant De Maria won the coveted James Beard Award for best restaurant design or renovation in North America. The designers at The MP Shift replicated an artist’s studio, with Soho in the ‘70s and the Bauhaus movement in mind. But it's not just the space that's beautiful; Venezuelan-born chef Adriana Urbina's dishes, composed heavily of veggies and seafood, look like they were made for Instagram. Outside of the visuals, however, what sets De Maria apart is Urbina's socially conscious approach. An open-air night market with diverse grub will open in the Bronx next month

Move over, Queens. The Bronx is getting an open-air, night market next month, the first of its kind to come to the borough. Setting up shop in Fordham Plaza, the festival will include food and craft beverages from more than 35 vendors, handcrafted items and live entertainment (h/t amNY). The event is free to attend and will run starting June 30 through October, happening on the last Saturday of every month.

Vendors unveiled for Williamsburg’s new food hall, set to open next to Radegast Hall this month

Does New York City really need another food hall? Before answering, check out the list of impressive vendors setting up shop in Williamsburg's new food hall at the end of May. The line-up includes iconic Di Fara pizza from Midwood, James Beard-nominated baker Zachary Golper's Bien Cuit, Brooklyn ramen shop Chuko, Greenwich Village's Corner Bistro and over a dozen more well-established food and retail vendors, according to Eater NY. Developer LENY market agency MRKTPL will open the doors on May 29 to its 15,000-square-foot indoor space at 103 North 3rd Street, where it will share a space with popular Radegast Hall & Biergarten, with a limited-vendor menu. Starting June 4, the North 3rd Street Market's hours will be extended and the full roster of vendors will be ready to serve up some tasty fare.

New renderings and construction shots of Essex Street Market ahead of fall opening at Essex Crossing

Construction of Essex Street Market's new home across Delancey Street continues to move along before its scheduled opening this fall. Designed by SHoP Architects, the market sits above the 150,000-square-foot Market Line, which will stretch two levels and connect three sites of the Essex Crossing development. The market's first phase is expected to wrap up in October, bringing 13 new vendors to the site in addition to the 24 vendors from the historic Essex Street Market. Additional renderings released by the city's Economic Development Corporation this week highlight the brightness of the space, courtesy of the huge windows, 60-foot ceilings and use of light-reflective material. "As we near completion on the project, we are excited to soon open a world-class public market for the local Lower East Side community,” NYCEDC President James Patchett said in a statement to 6sqft. “The new Essex Market will preserve the current community-based spirit while creating additional space to expand the market’s offerings, provide new jobs, and present a higher level of goods and services to visitors and area residents alike.”

The state of food trucks: Why owners are fed up with outdated regulations

According to a recent report by Food Truck Nation, New York City takes 9th out of the top places to run a food truck. The report ranks three categories: ease of obtaining permits and licenses, complying with restrictions and operating a food truck. And with a composite score of nine, NYC is falling behind other cities, specifically Portland, Denver and Orlando which take the top three spots, respectively. Based on the data, obtaining permits and licenses is what drags the city's scores down, falling to spot 26. Some cities have many fewer barriers to entry. For example, Denver requires ten different procedures to obtain a license, whereas Boston has a whopping 32. Unsurprising, Denver has 594 food trucks in operation. But Adam Sobel, the owner of Cinnamon Snail, the vegan food truck which is ranked as the top food truck in the New York City by The Daily Meal, has stopped running its food truck business on the streets of New York. Sobel only uses his food trucks for special events a few days a week, like farmers markets, because he says that every food truck on the streets of New York is basically illegal.

‘Sex’-y NYC cupcake shop Magnolia Bakery to open 200 franchise locations across the U.S.

We know “Sex and the City” did wonders for pink martinis, Manolos and Cynthia Nixon’s political career. And we’re pretty sure the cupcakes at Magnolia Bakery have the NYC-centric series to thank for its ability to expand worldwide. The popular pastries are, we're told, gobbling up the market in Dubai, Kuwait, Tokyo, Mexico City and Seoul, and closer to home in (besides New York City) Los Angeles, Chicago and now Boston. But like Ms. Nixon, the company isn't content to rest on its laurels. The Wall Street Journal reports that the Bleecker Street original will be plying its sweet treats in as many as 200 new franchises in the U.S. in the next five years

Central Park Boathouse returns this week with a new look, a new menu and a $2.9M makeover

The Central Park Boathouse restaurant has been spruced up with $2.9 million in renovations and upgrades and is perfect-date-ready just in time for outdoor weather. The New York Post reports that the familiar structure near the park's Fifth Avenue entrance at East 72nd Street has gotten much needed capital improvements like more seats (185 instead of 160) a new flood-proof tile floor and insulated glass that keeps the lakefront chill out along with a contemporary new look, new colors and lighting and better sightlines of the Central Park West skyline and rowboats gliding by. Even better, there's more room for customers at the new ADA-compliant bar.

150 years ago, Delmonico’s became the first restaurant to serve women unaccompanied by men

Photo of Delmonico's in 1903; photo via Wikimedia Nearly five decades before women were granted the right to vote in New York State, a group of fed-up ladies decided to protest a symbolic law that prohibited them from dining in restaurants without men present. After journalist Jane Cunningham Croly was barred from entering a dinner held at the New York Press Club, she and a group of women founded Sorosis, the first professional women's club in the United States. On April 20, 1868, Croly and her crew held a luncheon at the historic Delmonico's Restaurant in the Financial District, which became the first to serve women independently of men. Following the groundbreaking meal, clubs for only women formed all over the country.

By 2020, the U.S. will have 300 food halls

Between 2015 and 2020, the number of food halls operating nationwide will go from 70 to 300, finds a new Cushman & Wakefield report. This trend is very clear in New York City with 25 active permanent food halls and at least 10 others planned, or rumored, for the near future. Some of the most notable examples in the works are the TimeOut DUMBO food hall and the Essex Crossing's Market Line (set to be one of the largest in the world), in addition to examples like the very successful Urban Space which opened another food hall only six blocks from one of its other locations.

Essex Street Market announces more vendors for new Essex Crossing location

This week's announcement of more vendors that will make up the inaugural roster for Essex Street Market's new home at the Essex Crossing mega-development included some favorites from around the city along with current faces, reports Bedford + Bowery. New to the market when the 24-story building at 115 Delancey Street opens will be Williamsburg's Middle Eastern takeout spot Samesa, East Village herbal apothecary Roots, Fort Greene florist Saffron and Union Square Greenmarket regular Josephine's Feast!
