This Brooklyn brewery is selling beer made with bagels

Fusing the two favorites of many New Yorkers, Carroll Gardens brewery Folksbier has partnered with Black Seed Bagels to brew a special bagel-based beer. Called Black Seed Glow Up, the Berliner Weisse-style sour wheat beer will be available at a select number of restaurants and bars starting Thursday. Instead of being brewed with wheat, the Glow Up beer includes leftover bagels and honey.

Black Seed partner Noah Bernamoff told amNY that the company was looking for ways to reduce its impact on the environment. “We have been making pretty obvious bagel-adjacent things from our bagel waste, like bagel chips, bread crumbs, croutons…And then [we thought] how do we transform bagels into something totally different and totally unique and special?”

The beer is slightly hazier than the typical Glow Up beer from Folksbier because of the large amount of gluten in bagels. While the brewery normally uses fruit to referment this particular beer, Folksbier uses honey instead for this brew. Similarly, Black Seed boils their bagels in a solution of honey and water before baking in a wood-fired oven.

The beer will be available starting April 25 in 750 mL bottles at bars like Grand Army, Celestine, The Smile, Old Rose, As Is, and Otto’s Market, in Germantown. And on April 27, from 12 p.m. to 4 p.m., Folksbier and Black Seed will host a tasting event, which also includes bagel-style tartines and bagel chips with guacamole.
